Ingredients

Scale
  • 4 medium Seville oranges
  • 2 cups water
  • 2 cups granulated sugar
  • 1 teaspoon grated fresh ginger
  • ½ teaspoon red chili flakes (adjust to taste)
  • 1 tablespoon lemon juice

Instructions

  1. Wash oranges and slice thinly, keeping the peel on. Remove seeds.
  2. Combine orange slices and water in a pot. Simmer for 20 minutes.
  3. Add sugar, ginger, and chili flakes. Stir to dissolve.
  4. Simmer uncovered for 25–30 minutes until the mixture thickens and reaches gel stage.
  5. Stir in lemon juice.
  6. Transfer to sterilized jars. Cool and refrigerate.

Notes

For less heat, reduce chili flakes or omit them. Use as a glaze, spread, or cheese pairing.
