Ingredients

  • 4 cups chicken broth (or vegetable broth for vegetarian)
  • 2 cups water
  • 1 garlic clove, minced
  • 1/2 onion, sliced
  • 1 carrot, sliced thinly
  • 1 celery stalk, sliced
  • 1 tbsp soy sauce
  • 2 mushrooms (shiitake or white), thinly sliced
  • Chopped scallions for garnish
  • Optional: a few drops of sesame oil or a small piece of kombu

Instructions

  1. In a pot, combine broth and water. Bring to a boil.
  2. Add garlic, onion, carrot, celery, and mushrooms.
  3. Reduce heat and simmer for 10-15 minutes until vegetables are soft.
  4. Stir in soy sauce and optional sesame oil or kombu.
  5. Strain for a very clear broth if desired, or serve as is.
  6. Top with chopped scallions before serving.

Notes
