- 2 boneless, skinless chicken breasts or thighs
- 1/2 cup grated Parmesan cheese
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 1 cup sun-dried tomatoes (drained and chopped)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1/2 pound penne, rigatoni, or fettuccine pasta
- Fresh basil or parsley (for garnish)
Instructions
- Cook the pasta according to package directions. Drain and set aside.
- Season chicken with salt and pepper, then dredge in a mix of Parmesan and flour.
- Heat olive oil in a skillet over medium heat and cook the chicken until golden and cooked through. Remove and set aside.
- In the same skillet, sauté garlic and sun-dried tomatoes for 1-2 minutes.
- Pour in chicken broth and bring to a simmer.
- Add heavy cream and red pepper flakes. Stir and let the sauce thicken for 5-7 minutes.
- Return the chicken to the skillet and coat in the sauce.
- Mix in the cooked pasta until well combined.
- Top with extra Parmesan and garnish with fresh basil or parsley before serving.
Notes
For a gluten-free version, use rice pasta and gluten-free flour. For vegetarian, swap chicken with mushrooms or chickpeas and use veggie broth.
